Curried Cauliflower Soup

This soup is delicious - and really low cal! If you like curry powder and creamy soups (doesn't even taste like cauliflower once blended) you will love this soup for a healthy filling appetizer!

You will need:
  • 1 head cauliflower
  • 1 cup almond milk
  • 1 cup water
  • 1 tbsp chicken bouillon
  • 2 tbsp butter
  • 2 tbsp light cream cheese
  • 1 tbsp curry powder
  • 1/3 cup parmesan cheese (optional, not pictured)
  • Sea salt 
  • Pepper

Directions:
  1. Cut the cauliflower head into florets, rinse and steam them until pretty soft. 
  2. In a medium to large saucepan add in all ingredients besides the curry and bring to a boil stirring everything together. 
  3. Once all ingredients seem stirred evenly reduce the heat to low and hand blend ingredients until creamy. (If you don't have a hand blender you could try mashing the cauliflower and stirring or putting ingredients in a blender, but a hand blender would be the easiest option). 
  4. Add in the curry and stir - taste test to see if you want more curry.


Serve and enjoy!
