Broccoli, Spinach, & Kale Soup
This soup is extremely healthy, made of leafy greens and thickened with almond butter - it is a great supplement to any healthy routine, and it tastes good!
You will need:
4 Cups broccoli florets (not pictured).
4 Cups chicken stock (not pictured).
2 Cups spinach leaves
2 Kale leaves
1 small lemon
Sea salt, Celery Salt, & Pepper to taste
Add broccoli & chicken stock to a large saucepan and cook over medium-high heat until broccoli is soft.
Tear up the kale leaves & add kale, spinach, and juice from one small lemon. Cook over medium heat until leaves are soft.
Add in 2 tbsp almond butter & pinch of each seasoning to taste & thicken. Stir until almond butter is melted.
Puree with a hand blender.
Optional - add sliced almonds for a little crunch.
