Avocado, Tomato, Onion Salad

This salad is really tasty, uses all healthy ingredients, and the avocado is filling enough to leave you feeling satisfied. I love serving this as an appetizer, but I also make it just to snack on during the day.

You will need:
  • 1 avocado chopped
  • 1 cup tomato chopped (I use champagne sweet cherry tomatos and chop in half - any tomato is fine). 
  • 1/3 cup chopped onion
  • 1/4 cup olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp lime juice
  • Dash of Salt & Pepper to taste.  

Add all chopped vegetables and other ingredients to a mixing bowl and stir. 

*I think this salad is best if served chilled - so if you have time before serving keep it in the fridge covered.

*The amounts make the above pictured amount - feel free to halve or double the recipe, just keep the rations fairly similar!
