Teriyaki Salmon over Pineapple, Brown Rice & Quinoa

Would you believe me if I told you you could have this whole dinner ready in 20 minutes?! It is such a simple go - to to have on hand for a healthy fulfilling dinner that feels creative and gourmet. If you're looking for just a simple teriyaki salmon recipe you can find it here, but I highly recommend giving the pineapple rice a try... they pair together so well! This will be the first of a few healthier recipes coming up over the next few weeks as I'm getting ready for a trip to Miami and we all know that means I'm focused on a last minute beach bod, wish me luck! 
This recipe serves 2-3 people, if you plan on having any more than 3, or want pretty full portions please double up the recipe! 
Ingredients:
  • Salmon fillet (mine was about 1 lb). 
  • Teriyaki marinade / sauce (I used a sesame seed version). Approx 1/2 cup + 2 tbsp. 
  • Salt & pepper
  • 1 bag instant brown rice / quinoa blend. (If you can't find the same blend I used, just get a brown rice, or a quinoa, or whatever you think looks good! 
  • Jarred pineapple slices (you will need 3 slices + a few tablespoons of the juice)

Directions:
  1. Preheat oven to 450'
  2. Line a baking sheet with tin foil
  3. Lay salmon fillet on the foil, skin side down & sprinkle with salt & pepper
  4. Pour teriyaki sauce over salmon, a little at a time, and use a basting brush or spoon to spread evenly until fully coated. 
  5. Cover salmon with another layer of foil. 
  6. Set timer to bake for 12 minutes. 
  7. While salmon is baking add your bag of rice to a skillet, chop up a few pineapple rings or slices and add to the rice, add a few tablespoons of pineapple juice, and a few tablespoons of teriyaki sauce. 
  8. Sauce rice over medium heat for a few minutes until cooked. 
  9. Remove salmon from oven after 12 minutes. 
  10. Some of the sauce may run off during baking , if so feel free to add a little more at this time or spoon sauce from foil back over the salmon. 
  11. Cut into whatever serving sizes you want and peel the skin off. 
  12. Serve salmon fillet pieces over a bed of rice and enjoy!!!
