Hi everyone, happy Monday! Looking for something healthy to make up after the weekend? These chicken thighs are so simple and so yummy! The biggest thing for me when it comes to cooking any meat is keeping it as tender as possible. These are so tender and with such a simple flavor they are perfect to slice up and add to pastas or salads, although they are great just by themselves too! I put these over a pistachio pesto pasta which was a great combo!
This recipe is for 4 chicken thighs, you could easily adjust for however many you would like to make.
