Stir-Fry Veggies on the Grill

Hi y'all! After a weekend full of wine-tasting, brunch, bottomless mimosas, and pizza it was time to get a healthy meal on the table and load up on some veggies. Don't get me wrong this weekend was totally worth every calorie, but now it's time to get back into the swing of things as we roll into another week. My friends and I were tossing some teriyaki chicken on the grill tonight with my job being to fry up some rice and prepare the vegetables for a good ol' well balanced meal. Since the grill was fired up anyway I figured why not do a "stir-fry" on the grill and I'm happy to report the balance between stir-fry sauce & veggies and the taste of being cooked on the grill was perfect! I hope y'all enjoy as much as we did!
Ingredients:
  • Stir-fry vegetable blend (found in produce section @ grocery store), OR pick and chop up your own veggies and chop to desired sizes
  • Stir-fry sauce (found in Asian section of grocery store)
  • Olive oil, a few tbsps
  • Salt & Pepper, to taste

Directions:
  1. Heat grill up to a medium heat.
  2. While the grill is heating either line a grill safe basket with foil. *If you don't have a grill safe basket / pan to put veggies in then no worries, we'll go through alternate steps. 
  3. If you are using a grill safe pan / basket of some kind add in all your veggies, drizzle in some stir fry sauce and olive oil & add salt and pepper. Use a spoon or your hands to toss the veggies and evenly coat. Add more sauce if desired until vegetables are coated to desired level of sauce. 
  4. If you do not have a grill safe pan / basket then add all vegetables to a large zip lock bag or a bowl and toss with sauce, olive oil, salt & pepper. Lay out foil, add veggies, and fully wrap up or enclose in a foil packet that you can put on the grill. 
  5. Add vegetables to grill and cook about 20 minutes. If you're using a foil packet turn about half way through. If you're using a basket as pictured then use a spatula to gently toss veggies a few times while grilling for even cooking. 
  6. Remove from grill when cooked to desired level and enjoy!
