SLOW COOKER GROUND TURKEY TACOS

hey there! I apologize for the couple week hiatus in posting new recipes for y'all, but considering the reason is I was on a much needed vacation I am not that sorry ;) I spent the last week on a road trip exploring some great national parks, breweries, and coastal towns through Oregon & northern California. It was beyond beautiful and relaxing and I would highly recommend. Feel free to E-mail me for any recs, as much as I love talking food all the time I am also a total travel bug! Now I'm back to reality...unpacking, laundry, work, and the realization that it's time to work off all the great vacation meals. It would be nice if we could just go on vacation without having to worry about all that aftermath, am I right?! With all that fun stuff going on this week a nice and easy crockpot meal was necessary. These light turkey tacos were not only super easy but also got a "you should make our tacos like this every time you make tacos" from Jas.... easy, light, delicious, and a meal we can both enjoy?! WIN, WIN!  Oh and then there's the beer, that was for the hundreds of work E-mails I had waiting for me post vacation, plus, what's a taco Tuesday without a good margarita or Mexican beer pairing?! After all our Oregon brew tastings we were inspired to try something new this week. I proudly partnered up with Estrella Jalisco to bring this taco Tuesday to life!

SLOW COOKER MEAT INGREDIENTS:
  • 2 lbs ground turkey meat
  • 2 cups beef (or chicken) stock
  • 2 packs taco seasoning (or recommended amount for 2 lbs meat). 
  • 1/2 cup low fat mexican blend cheese (regular is fine too). 
  • 1/2 cup finely chopped onion or 1 tbsp onion powder (optional for flavor)
  • Pinch of sea salt & pepper to taste, optional. 
SLOW COOKER MEAT INSTRUCTIONS:
  1. ​Add all ingredients to slow cooker and stir up to break up the meat. 
  2. Turn on low heat for 8 hours. 
  3. Stir up to make sure all meat is broken up. 
  4. Drain any excess liquid / fat you don't want in the meat if it isn't all soaked up during cooking. 
  5. Serve up in your tacos or over your taco salad and enjoy!
It seriously doesn't get any easier than this y'all. It took me 5 minutes to get everything in the crockpot before work, and my tacos were ready to serve when I got home!

The taco instructions below will be to create the tacos as pictured - I separate the meat and taco instructions so you can add or subtract toppings based on your preferences, make a taco salad instead, or do whatever desired with the slow cooker meat! You may end up with leftover meat just depending on how many you are cooking for - after two of us were done we had enough left for another dinner or to make some taco salads the next day! I am also leaving quantities vague for the tacos, use your judgment and chop up as much as you'd like for the amount of tacos you are making!
TACO INGREDIENTS:
  • Taco shells - as many as desired. 
  • Cooked turkey meat
  • Shredded lettuce
  • Shredded [mexican blend] cheese
  • Diced bell pepper [I used a tri-color blend]
  • Diced red onion
TACO INSTRUCTIONS:
  1. Lay out taco shells. 
  2. Layer shredded lettuce, meat, and then cheese & diced veggies on top. 
  3. ENJOY!

I make tacos often and haven't tried turkey. I'll have to try this for Taco Tuesday!

I absolutely love my slow cooker. It's perfect for busy days where I want to just come home and eat dinner quickly. These tacos look incredible!

This looks amazing. I have no idea why, but I am nervous to try ground turkey. It is silly because I actually love the flavor of turkey!
