Skinny Thai Peanut Chicken Wraps

Hi y'all, happy Friday! This wrap is a recipe inspired from a clean eating book I read a long time ago, it quickly became a favorite healthy quick meal and is one I totally depended on in college. I figured it was about time I share with you, because who doesn't love a meal that's super tasty, inexpensive, beginner level, and healthy?! The grilled chicken, healthy thai peanut sauce, and crunch of the slaw compliment each other so well, and another bonus? The chicken and sauce are all made in one pan so minimal kitchen clean up to deal with. With that being said, let's get to it! 
*This recipe will make 2-3 wraps, you could very easily adjust the quantities for your needs!
Ingredients:
  • ​2 boneless skinless chicken breasts 
  • Broccoli slaw, about a handful per wrap
  • 2/3 cup low fat peanut butter
  • 2 tbsp olive oil
  • 1 tbsp + 1 tsp soy sauce
  • 2 tbsp water
  • 1 tsp rice vinegar
  • Flatout wraps for lowest calories option (as seen in image) - or other wraps of your choice

Directions:
  1. Chop chicken into small cubes, about 1/2 - 1", as picture above. 
  2. Add chicken and olive oil to a skillet, cook over medium heat, continuously stirring until chicken is fully cooked. You can cut one of your chicken pieces in half to make sure there is no more pink to be on the safe side. 
  3. Add in vinegar and stir in. 
  4. Add in peanut butter, water, and soy sauce and stir until fully combined. 
  5. Lay out a wrap, add a handful of broccoli slaw, and as much chicken as desired. 
  6. Wrap up, serve up, and enjoy!
