Shrimp & Avocado Caesar Salad

Another light and healthy Monday here, trying to do my best to get back into the swing of things during the week days! Caesar salad is one of my very favorite classics, and while I love the basic caesar or chicken caesar salads, adding in avocado and subbing shrimp for chicken strips is just so. darn. good! I also always use a yogurt based dressing to cut calories and up protein intake, to be honest I prefer it to regular caesar so win win situation! With swim suit season in full force it's time to up the salad intake and I'm trying to make that as delish as possible for the both of us! 
Recipe serves 2-4 people, depending on whether you want this to be enough for a whole meal, or a nice sized side salad. 
Ingredients:
  • ​1 head romaine lettuce
  • 1/2 pound cooked shrimp, chilled
  • 1/2 cup shaved parmesan cheese
  • 1 avocado
  • 1 tomato (I used a vine ripe tomato)
  • 1 handful caesar parmesan croutons
  • 3+ tbsp yogurt caesar dressing
  • Ground pepper to taste
Directions:
  • Chop romain lettuce and dice up avocado and tomato. 
  • Add all ingredients to a bowl, drizzling a few tbsp of dressing to taste. 
  • Toss up and add a little ground pepper, and more dressing if desired. 
  • Enjoy!

Shrimp and avocado is not the pairing that I would have thought of, but they do pair well together. I surprised when I first read about it in your blog, but I ended up trying out. I was able to taste something that is original and I love it. I hope that I can go and eat a lot more of it in the future. I want to try out more of the recipes that you have in your mind.
