Another light and healthy Monday here, trying to do my best to get back into the swing of things during the week days! Caesar salad is one of my very favorite classics, and while I love the basic caesar or chicken caesar salads, adding in avocado and subbing shrimp for chicken strips is just so. darn. good! I also always use a yogurt based dressing to cut calories and up protein intake, to be honest I prefer it to regular caesar so win win situation! With swim suit season in full force it's time to up the salad intake and I'm trying to make that as delish as possible for the both of us! Recipe serves 2-4 people, depending on whether you want this to be enough for a whole meal, or a nice sized side salad.
