shrimp & artichoke pesto pasta

INGREDIENTS
  • 1/2 lb penne pasta
  • 2.5 cups water
  • 1 cup milk
  • 2 tbsp butter
  • 1 lb shrimp, tails removed
  • 1 tsp Italian seasoning
  • 6 oz. pesto sauce
  • 1/2 cup quartered artichoke hearts
  • 1/2 cup Parmesan 
  • 2 tsp salt
  • 1 tsp pepper
DIRECTIONS
  1. Heat 1 tbsp butter & Italian seasoning over medium heat until butter starts to melt. Add in shrimp and toss until shrimp is cooked (turns orange). You can use precooked shrimp and just quickly heat with this step. Set shrimp aside. 
  2. ​In a large frying pan or wok add 1 tbsp butter, pasta, milk, water, salt, and pepper. Bring to a boil and reduce to medium / high to simmer, pasta should be al dente once water & milk have boiled out. Drain excess liquid if necessary (a little in the pan is fine). 
  3. Add pesto sauce, Parmesan, artichoke hearts, and cooked shrimp to the pan. Toss over low / medium heat until everything is evenly combined and warm. 
  4. Serve & ENJOY!

I am really dreaming to make a pasta that has shrimp as one of the ingredients.. I am actually a big fan of shrimp ever since I have first tasted it. We are actually not that capable of having this food served everyday because we all know that it is not something that can be bought with a small amount of money that is why we have this shrimp meal served often. Anyway, I would really be happy if this kind of pasta meal will be served on my birthday which is going to be two weeks from now. It's an honor to be here on your page seeing this meal that you have shared here.

I have this incredible fondness towards pasta ever since I had my first pesto. It was so good, I have never been such a fan of a food before it. Then, I started making my own recipes, not just with pesto, but with the whole pasta family. I love surfing the internet to try lots of new ideas so that I could serve them during the holidays. This recipe, I would definitely make it on my birthday, which is just two months away.
