Shrimp & Alfredo Linguine

Alfredo sauce, AKA one of my favorite comfort foods, tossed with shrimp sauteed in butter & tossed with linguine noodles is basically heaven on a plate. One of my favorite things about making alfredo sauce at home (recipe) is you know it is as fresh as possible and you can control everything going into it. Don't get me wrong, it's not like it's healthy, but sometimes those extra few tablespoons of butter the restaurant down the street tosses in there maybe aren't actually necessary for flavor? Just my opinion, but I love knowing I've made it and it has just what it needs. If you don't like shrimp you could eat this plain or substitute for grilled chicken, but the buttered shrimp sure tastes amazing to compliment this sauce! 
Note: This recipe serves 2-4 people depending on if this is your main dish or being complimented by sides. For 4 or more people I would recommend doubling the recipe. 
Ingredients:
  • 3 tbsp butter + 1 tbsp butter
  • 2 tbsp flour
  • 2 tbsp garlic paste (or 2 cloves, minced)
  • 1/4 cup cream cheese
  • 1 1/2 cups milk
  • 1 cup grated Parmesan cheese
  • Salt & pepper to taste
  • 1/2 pound cooked shrimp
  • 1/2 box (or 1/2 pound) Linguine noodles

Directions:
  • Saute shrimp for a couple minutes with 1 tbsp butter just to heat and flavor. Set aside. 
  • Start a pot of boiling water and add your linguine. Boil until al dente & drain. 
  • While pasta is boiling... 
  • ​Melt 3 tbsp butter over medium heat in a sauce pan. 
  • Add in garlic paste & flour, whisk until in a creamy paste (as pictured above)
  • Add in cream cheese and milk, adjust heat to high and bring to boil, continuously whisking until mixture is even. 
  • Reduce heat back to medium and add in parmesan cheese and about a tsp each of salt & pepper. 
  • Whisk until full combined into a smooth creamy sauce. Voila, you have delish alfredo! 
    • If you would prefer your sauce any thicker at this point you can add in a little more cheese or flour, whisking until mixed in. If you would prefer your sauce a little runnier add in another 1/4 cup milk or so and once again, whisk until mixed in until you get your perfect sauce! 
  • Add shrimp to the drained noodles, pour the sauce over the top, stir up & enjoy!
