If you're not familiar with Shepherd's Pie it's a red meat, typically lamb, potato, and vegetable combination. Similar to chicken pot pie, but red meat and mashed potato. My dad grew up in New Zealand where meat pies are a much more common dish and loves such combinations. On a different note, we've been going to an Afghan restaurant lately which serves some forms of fried meat and potato pastries (different than above) - but when I said I was going to make an appetizer for dinner and he asked if I could make some rendition of the Afghan appetizers, I thought why not make them into Shepherd's Pie versions?! These were so different and delicious served with ketchup!
The exact amount of the filling ingredients isn't super important on this recipe so I put a window of how much you could use. For example I bought a cut of meat that was .75 pounds, but if you bought a little more or less, no big deal. The below recipe made about 20 dumplings.
