Sesame Oil Fried Rice

Hi, happy Monday everyone! Last night on the menu was this yummy fried rice, fried in sesame oil (and butter) to go with slow cooked Mongolian beef. I absolutely love making Chinese food dishes at home because I feel so much healthier, even if it's "comfort food" because I can control all the sodium and oils and things going into it. If you haven't made fried rice before, it's a lot easier than you might think. The sesame oil and butter gives such a nice flavor and then soy sauce for the yummy fried rice taste and color. I hope you enjoy it as much as I did! 
You will need:
  • 1.5 cups dry, white jasmine rice
  • 2 1/2 cups water + 1/2 cup water, separated. 
  • 1 tbsp butter + 1 tbsp butter + 2 tbsp butter, separated
  • 2 tbsp sesame oil
  • 2 eggs
  • 1/2 - 1 frozen bag pea, carrot, corn blend. Depending on how much veges you like in your rice. 
  • 1/4 cup soy sauce, use low sodium if desired. 
Directions:
  • Measure out 1.5 cups of your white rice, 2.5 cups water, and 1 tbsp butter.

  • Bring all ingredients to a boil in a saucepan and then immediately turn to low heat and let simmer until rice is fully cooked (no more water is left). While the rice is cooking you can get started on the next part.

  • Whisk your two eggs together and fry them up in a large frying pan ( we will use for the fried rice) with 1 tbsp butter over medium heat.  
  • Leave the burner on medium heat and set eggs aside in a bowl.

  • Add 1/2 cup water and at least half the bag of mixed frozen veggies to the frying pan. Bring to a boil until all the water has evaporated and veggies are thawed.

  • Add your sesame oil + 2 tbsp butter to the veges and pour the cooked white rice in. 
  • Fry over high heat until some of the rice starts to brown, stirring up constantly. If rice doesn't seem to be browning at all you can add a little more sesame oil at this point. 
  • Add your fried eggs back to the pan and stir in. 
  • Pour soy sauce in and continue to stir until evenly coated. Taste test because you may want to add more soy, depending how "salty" you like your fried rice!
  • Serve up and enjoy!

Anything will taste great if you put sesame oil or sesame seeds on it. I believe these actually tastes better than it looked. You don't need a better photographer. You just need more people to actually try doing what you mentioned here and that will make you an authority. I believe you did a very good job here. You just gave me an idea what to serve my children for dinner later. Thanks you so much for these. I know I did the right thing going to this page.
