SAVORY sausage & cheese breakfast muffins

These savory breakfast muffins are the product of another delicious and successful recipe swap club month. This month I worked from EAT what we EAT which is a great blog highlighting recipes that are easy, and family friendly. I chose to make their breakfast muffin recipe for two reasons. One, because the latest breakfast post I did has been a total hit, I mean y'all seem to really love breakfast! Two, because they looked downright delicious, I mean c'mon who doesn't love a good cheesy breakfast?! I made these up on Superbowl Sunday for a pre-game brunch and they were a total hit. Another great bonus? They are super easy, like anyone can do this easy. You brown up some sausage, mix in some pancake mix and eggs, and then load them up with cheese and let the oven do the cookin'. Are you sold yet? Let's get to it!

Note: I adapted this recipe to make 12 standard muffins. The original was for 24-30 mini muffins, so you could easily spread the mix out into a mini muffin tin if you'd prefer bite size! If you choose to do this cut from 6 eggs to 4 eggs per original recipe! I added 2 eggs to have the perfect amount for 12 standard muffins. Check out the original recipe here: 
INGREDIENTS
  • 12 oz. breakfast sausage (ground or links)
  • 2 cups shredded cheddar
  • 1 cup Bisquick pancake mix
  • 6 eggs​
DIRECTIONS
  1. Preheat oven to 350'. 
  2. Chop up sausage links or get out ground breakfast sausage. Brown in a frying pan until fully cooked / heated. 
  3. Add all ingredients (cooked sausage, all cheese, eggs, Bisquick mix) to a bowl and stir together until evenly combined. 
  4. Grease a standard 12 muffin tin, evenly distribute muffin mix. 
  5. Bake 20 minutes. 
  6. Enjoy!

A perfect recipe for a breakfast on the run and on the go. These days, I’ve been getting a terrible habit waking up 15 minutes late than usual. I would think that my alarm clock is broken, but I also could be tired and just sleep in. I don’t have the time to eat breakfast and beat the traffic jam so I would have to sacrifice one or the other. And we all know what most of us would sacrifice. If I bake these at night, it’ll be easy for me to just grab a few and run for it. Besides, I do have free coffee in the break room.
