I'm so excited to share the recipe with you because not only were they outstanding and like really pretty, but they were super easy to make and will help you impress whoever you're cooking for. hey there! this recipe is the latest and greatest from my recipe swap club. This month I partnered with The Culinary Taste to bring you this oh so summer perfect ribs with a Jack & Coke marinade. This particular collaboration was extra fun because I got to interview the chef behind the recipe as well as see one of my recipes come to life on his blog. For those of you who may be new to my blog the recipe swap club is a group in which I collaborate with a new blogger each month to try out one of their recipes and vice versa - I love it because it helps me learn and try new things, which in turn I get to share with you!
Is anyone else as excited as I am that summer is finally here?! I mean maybe not officially but Memorial Day Weekend approaching just screams summer is finally here. As fun as summer is it also means lot's of entertaining - Memorial Day, 4th of July, baby showers, you name it. If you're anything like me it also means white wine season... I mean it's only appropriate to step up the refreshing wine game for beautiful outdoor days, right?! With that in mind I love having easy to whip up appetizers or shareable plates that impress guests, and well, pair well with my wine. I made this Puff Pastry flatbread for a get together recently and it was a total hit. I topped it with brie, honey, apple, and onion for a really yummy mix of flavors, and the Puff Pastry makes it so light and airy. I hope y'all enjoy as much as I do.
Anyone else feel like summer crept up on them this year? Like having a total panic "I forgot to do my beach bod diet and it's already beach weather OMG" kind of moment? I'll be honest, that's totally where I'm at this year and it sucks, not to mention there's a bunch of fun holidays coming up (I love MDW & 4th of July weekends!) AND some trips I have planned. I've said it to myself before and realistically will probably say it again ( but hopefully not ), better luck next year! Anyway, I am so excited to share this recipe with you as I teamed up with Frank's RedHot to bring you guys a perfect holiday weekend (think Memorial Day) recipe to put on the table that is not only delicious, but won't break that calorie bank. I love this because typically all the fun holiday foods aren't also healthy, and well let's be honest, that veggie tray get's a little boring time after time. These are super easy to make, are packed with protein and veggies & will make you and your family/ guests feel just a little bit better about all the other goodies we both know you'll snacking on! No exaggeration this may be my favorite dish I have ever made. I make a lot of simple recipes here, because well for the most part that is what I make. I'm busy working full time, trying to maintain my relationship, social life, taking care of my pups, keeping up with this blog, and trying to get some down time here and there... so decadent dishes are few and far between at home, but that doesn't mean I don't absolutely love them. When I go out to eat I am all about the "foodie" items on the menu, mixing flavors, fancy dishes, you get the drill. I love sharing my day to day recipes because that is what a lot of you like to make as well, I know I'm not the only busy one, but every now and then you need to treat. yo. self.
I just received my new silicone cupcake / muffin molds in the mail and could not wait to give them a try. Silicone baking sheets or pretty much silicone anything has become my best friend in the kitchen. I mean it's super easy to clean and use, and absolutely non stick which means no adding extra grease and oil when baking, and it's reusable! I highly recommend. Anyway, these slightly lemon-y blueberry muffins were my guinea pig recipe to test these molds out and not only did I love the molds and how easy the baking process was, but we absolutely LOVED the way these muffins turned out. I'm a huge fan of lemon in desserts, but I know it's not for everyone. so I did a just slightly added lemon version of a classic blueberry muffin for a little twist of flavor everyone can enjoy. Next time around I'll be ramping the lemon up :), so lemon lovers, stay tuned! I used blueberry yogurt to make these nice and moist, which I love because it made these muffins almost cake like which made them not only a perfect breakfast, but a yummy dessert as well. I love a good "fluffy" muffin as much as the next person, but sometimes I just have to switch it up! Think Nothing Bundt Cake, in muffin form & sans the glaze. Seriously so yummy! I hope you enjoy!
I present to you yet another recipe that was the result of "how can I use up what I have in the fridge for dinner tonight?" I'm telling you that is seriously how I come up with some of my favorite recipes, forced creativity! I made this and loved it so much i made it again two nights later so I could photograph and share it with you, ha. It takes less than 15 minutes to have on the table, is all cooked in one pan, is packed with veggies and lean protein, and is absolutely delicious. Anyone else reading that saying "win, win"? Seriously give me something easy, healthy AND tasty and I am a happy camper. This is a perfect easy weeknight meal, and makes taste test and approved leftovers. I brought a bowl for lunch the next day and really enjoyed it, although I probably wouldn't heat up after more than a day or two as the cabbage will get a little soggy. This recipe will feed 2-3 as a meal. Enjoy!
This recipe is the product of another month participating in a recipe swap club, this month I recreated and adapted this recipe from Don't Give A Fork, a blog by Payal out of Mumbai, India. I truly adore working from her recipes as they are so packed with flavors and inspiration from different cultures, and this one was no different. Al dente noodles tossed with olive oil and spinach, topped with a pan roasted cauliflower and vegetable mix, topped with a a Parmesan onion cream sauce and chili flakes. While all the ingredients were so simple they weren't something I would have thought to combine in a pasta dish so thank you to Payal because this was freaking amazing!
Anyone else out there feel like life is just too darn busy right now?! Seriously I don't know where my days and weeks are going! It's always easier said than done to take a couple hours on Sunday to meal prep for the week but I'm so glad when I do because my weeks are a little less stressful when I can just grab my lunch and go. Especially if I don't even have to heat it! I think a lot of you probably feel the same way because the last no heat meal prep post I put together has been one of your favorites and most pinned! (You can find that one here: No Heat Ham & Cheese Roll Ups with Greek Quinoa Salad)! This time I switched it up with some deli sliced chicken and provolone with pesto orzo salad as the side.... Hi y’all! This week marks one year since I gave Simply Delish Eats its name and decided to really pursue blogging. Bear with me as this isn’t a typical recipe post.
