overnight cheesy hashbrown & egg casserole

Yes, that's right, I said overnight breakfast. You know what that means? You get to wake up, pop this in the oven & serve a great breakfast with zero morning time prep work. It is so easy to put this together the day or night before you want to bake it and get all your prep work and dishes out of the way so you can just enjoy your morning. I particularly love this recipe for holiday mornings. You've got enough to worry about on holidays like focusing on your main meal of the day and spending time with family so anything you can do the day before is always helpful! I also love overnight breakfasts because let's be honest, if you're having any sort of party out or at your house, a stress free comfort food breakfast will be real nice to wake up to, especially if you had one too many cocktails the night before. Whatever your occassion this is sure to be a family favorite.... I mean what's not too love about cheesy egg & potato all combined together?!

INGREDIENTS:
  • 12 eggs
  • 1/2 cup heavy whipping cream
  • 1 lb ground pork breakfast sausge
  • 1 small white or yellow onion, diced
  • 1 poblano pepper, diced
  • 30 oz. bag frozen shredded hash browns
  • 2 cups shredded cheddar
  • Salt & Pepper
DIRECTIONS:
  1. Add your breakfast sausage to a skillet and cook over medium heat. When there is only a little pink showing left in the meat add in your diced onion & pepper and continue to saute until meat is fully cooked and vegetables soften up a little. (If you hate onion or pepper, leave them out - it will turn out just fine). 
  2. While meat & veggies are cooking add your eggs to a large mixing bowl and whisk until combined. You can use a kitchenaid mixer or whisk by hand. 
  3. Add whipping cream and about a tsp. each of salt & pepper to your eggs and whisk again. 
  4. Add cooked meat/veggie mix into egg mixture and stir everything together. 
  5. Add in 1 1/3 cup of shredded cheddar & your 30 oz. bag of hash browns. Stir until everything is evenly combined. 
  6. Grease / spray a 9 x 13" baking dish and pour your breakfast mix in, spreading evenly through the pan. Sprinkle remaining 2/3 cup of cheddar on top. 
  7. Cover baking dish in foil, saran wrap, or a lid and set in the fridge, leave overnight. 
  8. Preheat oven to 350' one hour before you are ready to eat. Bake casserole (uncovered) 45-60 minutes. (Check at 45 to see if done or if it looks like it needs a few more minutes, this will cook slightly differently depending on your oven)!. Remove from oven, and let stand for about 10 minutes before cutting and serving to allow everything to cool and set. 
  9. ENJOY!

The combinations of the ingredients is great!!!
If you cook the casserole with foil on it for 45 mins, it will not be done. There wasn't instructions as to leave the foil on or off.

I looked back through the recipe and it does say "uncovered" in parentheses. This is going to be our Christmas morning breakfast, so I hope it's going to be good!

Hi Laura,

Between 9-12 servings depending on if this is part of a breakfast or a full breakfast. The piece shown in the image is 1 serving if cut into 9 pieces.
You use a 9x13" pan to bake if that helps on visualizing serving sizes.

Hi Kaitlyn!

Milk should work just fine, I would suggest using just a couple tablespoons less since it's not as think, or using a whole milk.

They turned out great! Having two in the oven did add on some time to the cooking process. Took a little extra time for the middle to cook but once they were both almost done, I transferred it to the chafing dish with a sterno under and it finished cooking there.

Hi Laura!

No I did not thaw the hash browns, mix them in while frozen, they will thaw enough in the mix overnight in the fridge.

Made this this am for an early Christmas Eve breakfast. Everyone loved it. No onions or peppers. Tomorrow I'm making it extra cheesy, no onion, no sausage, no pepper. This is sooo easy and sooo good!

Hi!

It should not spill over the top, mine did not and it really filled the dish. It may bubble a little bit but shouldn't expand enough for you to lose much of it. If you are concerned you could try baking it covered in foil and checking half way through if it seems okay to remove foil. I hope you enjoy!

Hi Jon,

I have not tested freezing this recipe, however I think it would be just fine frozen and warmed up. I would recommend dividing up into individual serving sizes before freezing so it is only being warmed up one time.

You can definitely use hamburger if desired. It may not have be as "breakfasty" tasting as using breakfast sausage but would be a fine substitute ingredient wise! :)

Hi Sarah!

You could definitely cook it when you made it if you didn't want to do an overnight. I haven't tested but I would recommend cooking a tad longer or sitting the frozen hashbrowns out to thaw a little before you started as they won't be thawed the same way they would overnight. As long as it is warm throughout, you are fine! :)

Hi Jenny!

I am so sorry I missed your question. You do not need to have the oven on an hour ahead, normal preheat is fine. The hour ahead was referencing an hour before you are ready to eat as the preheat and baking time combined is about an hour! :)

Since finding your recipe, I have made this several times. My family loves it! Makes Sunday mornings easy for me. First time,, I followed recipe, then I started to mix it up for a variety. I have used sausage, ham and bacon and added spinach, mushrooms and tomatoes, I do use milk now for the convenience of not always having the cream on hand, I also have used different kind of cheeses and used less cheese simply because I ran low lol. Today we are having it with the ham, fresh spinach, onion and cheese.I love it, took me less than 10 minutes to make last night, and any left overs kids will eat tomorrow. :-)

Hi Nikki!

I do not want to make any guarantees as I have not tried baking this in a muffin pan, but I think it would do just fine! Just make sure to grease the whole pan so they don't stick, and watch them a little closer as the baking time will most likely be different due to the smaller sizes. Just note that it will not "rise" like a muffin, it will just make individial size pieces :)

Yes, you may use frozen diced hashbrowns, just add a little cooking time to the total in order to make sure they get cooked all the way through! :)

This makes about 12 servings - for a larger group or if there will not be other sides to supplement I would make two trays.

Hi!

I️ am so glad to hear that! If you use refrigerated hash browns you can stir in in the morning, but at night should be fine too since they will stay refrigerated all night long!

Made this for Christmas morning today. Big hit!
Only change was didn’t have a pablano so used a can of diced chilies and 1/2 diced orange bell pepper. Required about 70 mins cook time. Delicious and will make again.
