one pan: "turkey taco" cabbage skillet

I present to you yet another recipe that was the result of "how can I use up what I have in the fridge for dinner tonight?" I'm telling you that is seriously how I come up with some of my favorite recipes, forced creativity! I made this and loved it so much i made it again two nights later so I could photograph and share it with you, ha. It takes less than 15 minutes to have on the table, is all cooked in one pan, is packed with veggies and lean protein, and is absolutely delicious. Anyone else reading that saying "win, win"? Seriously give me something easy, healthy AND tasty and I am a happy camper. This is a perfect easy weeknight meal, and makes taste test and approved leftovers. I brought a bowl for lunch the next day and really enjoyed it, although I probably wouldn't heat up after more than a day or two as the cabbage will get a little soggy. This recipe will feed 2-3 as a meal. Enjoy! 
INGREDIENTS:
  • 1 lb raw ground turkey
  • 1 oz. pack of taco seasoning
  • 6 cups chopped cabbage (packed cups)
  • 1 tbsp olive oil
  • 1/2 cup shredded Mexican blend cheese (can use a low fat or 2% blend). 
DIRECTIONS:
  1. Add  raw turkey, chopped cabbage, and olive oil to large skillet, heat over medium and stir up until your turkey meat is really broken up. 
  2. Continue to cook over medium heat, stirring. When turkey is about half way cooked (half browned, half pink) add in your taco seasoning. 
  3. Stir in evenly, continuing to stir until meat is cooked (browned) all the way through. Add in your cheese and stir in until melted. 
  4. Serve up and enjoy!

oh wow wow! This is very timely, I've been meaning to cook something that is very easy and can be used as filling for pita bread. I think this one works!

My wife got ground turkeys for tacos for dinner to be a bit healthier. She said that I should start cooking it because she has to make an important phone call. She didn't know that I browned it in a skillet with bacon grease from breakfast! I finished it and prepared the remaining ingredients. Even put up a candle light on the table to make the mood romantic. When I called her to eat, she said it was the best turkey tacos she ever had and it's so healthy, too! :)
