How To Bake Sweet Potato Rounds

Sweet potato was never my thing growing up, I'm not sure what changed but I can't get enough of it now! They say your taste buds change every so often, or maybe I just learned how to cook and prepare it ways I liked it! I absolutely love baking these thicker rounds, despite most recipes usually calling for them to be much thinner. If you let them bake long enough the outside gets crispy and the inside is almost like mashed potato and it is a-maz-ing. Seasoned with a little olive oil, salt & pepper these come out with that perfect sweet & salty flavor combo and are so simple to prepare and pop in the oven. Healthy, easy, and delish? That's my kind of recipe!

Ingredients:
  • 2 sweet potatoes
  • Olive oil, approx 4 tbsp
  • Sea salt & Pepper to taste

*This recipe will make 10-14 rounds, depending on the size of the sweet potato. If you need to make more, you may want to increase your baking time a few minutes! 
Directions:
  1. Preheat oven to 425'
  2. Peel sweet potatoes and slice into about 3/4-1" thick slices
  3. Get out a baking try and a small plate, pour olive oil onto the plate, exact quantity doesn't matter. Start with a little, add as you need to if you want. 
  4. Dip each side (flat surface) of the sweet potato into the olive oil and place into the baking tray. 
  5. Sprinkle a little salt and pepper over the top of the rounds. 
  6. Bake 35 minutes total. *Half way through baking, flip the rounds over and sprinkle some salt & pepper on the other side. This will allow both sides to evenly brown*
  7. Enjoy!

I was a picky eater when I was a kid. I only eat fried food, and the only vegetable I liked were potatoes. My mom was in the restaurant business growing up, so I guess it really helped me in becoming more adventurous with my food. I am still obsessed with potatoes, so I try to eat all kinds. I'm trying to get my kid to eat more vegetables too, and I hope this sweet potato recipe will help me in getting her to eat more veggies.
