Chocolate Chip Cookie Butter Energy Bites

Happy national chocolate chip day! I thought we'd celebrate with a healthier snack than a chocolate chip cookie like everyone else seems to be doing. Also wanted to make these because I just can't get enough of these little energy bites, and it seems like you guys can't either! The chunky peanut butter bites I made are the most viewed recipe on the blog to date, and the chocolate peanut butter ones aren't too far behind! I love knowing what you guys like and giving you more yummy options :) 
Ingredients:
  • 1 cup cookie butter
  • 1 1/4 cup old fashioned oats
  • 3 tbsp honey
  • 2/3 cup semi-sweet chocolate chips
Directions:
  • Mix all ingredients in a small-medium sized mixing bowl using a spatula or spoon. 
  • Chill dough in fridge for 10 minutes before forming the balls (easier to work with cold)!
  • Use your hands to roll dough into balls, about one inch diameter. 
  • Store in refrigerator and enjoy whenever you need a little protein / pick me up!
