Cheesy Zucchini

Hi everyone! It's been a busy week this week so I haven't posted a recipe since last Monday, but in tradition with what I've been doing over the last few weeks I wanted to make up another fun healthy alternative this Monday! I truly believe in trying to start the week off with good eating habits to make sticking to it through the week a little easier, and allowing more guilt free splurging over the weekend. This cheesy zucchini has been on my mind to try lately and I'm so glad I finely attempted making some, because it was so good!! Mac & Cheese is one of my favorite guilty pleasures when it comes to food, and after a few of my other zoodle recipes came out good (asiago zoodles & white wine garlic zoodles) I couldn't wait to attempt a cheesy version. This recipe is best served as a side dish... can't wait to try this again and throw some protein to make more of a meal out of it! I encourage you to get creative with this. With that being said, let's get to it! 
Ingredients:
  • 1 zuchinni
  • 1/2 cup water
  • 1 tsp salt
  • 1 tbsp butter
  • 2 tbsp milk
  • 2/3 - 1 cup shredded cheddar cheese
For best results you will want a spiralizer, but if you don't have one you will be able to chop or grate to get similar results! 



​*This recipe makes a side dish for 2 people. Feel free to double up if you are cooking for more.

Directions:
  1. Slice the ends off of your zucchini and use your spiralizer (as per the directions or guidelines your spiralizer suggests) to get "zoodles". Chop zoodles into more bite size pieces like macaroni noodles. *If you don't have a spiralizer thinly slice and chop to get noodles or use a cheese grater to get shreds. 
  2. Add water & zoodles to a sauté pan, sprinkle salt over zoodles and bring to a boil. Boil and stir until water is almost completely evaporated and zoodles are soft. 
  3. Reduce heat to low / medium. Add butter, milk, and cheese to the pan. 
  4. Stir until fully combined. Add up to another 1/3 cup of cheese if desired until you get the consistency you desire. 
  5. Serve up, add a little salt & pepper to taste if desired, and enjoy!

Would it be ok to use country crock instead, only because that's all I have on hand? Also would it be good reheated??

Hi Kara!

Country crock will be just fine in replacement for the butter. As for reheating, I probably wouldn't recommend it. Due to the zucchini being so water based and all the cheese I think it would be a little on the soggy side, I recommend making enough to serve when you are going to eat it, but if you have leftovers and give it a try I'd love to hear how it worked out for you! :)

I also added grilled chicken and made this using 2%cheddar and skim milk. Perfect south beach diet meal. Added some Penzeys toasted onion spice, garlic powder and dash Italian seasoning. Such a versatile recipe. Thanks for posting.

Hi Erin,

This recipe is about 230 calories, 6g carbs, 16g protein, 18g fat. This makes a side dish for 2 people or if you add some protein to make it more filling / well rounded it could be a meal for one.

Hi Candice,

This is for the whole recipe - keep in mind that the majority of the calories comes from the cheese, so choosing a 2% cheddar vs. a whole milk cheddar will affect this!

I have not tried this with mozzarella - mozzarella melts a little differently than cheddar but I THINK it would turn out okay. I would love to hear from you if you try this so I know how it turned out for you!

I made this tonight as a side to baked chicken and roasted broccoli. My fiance, toddler, and I all loved it! I also sprinkled some red pepper flakes onto mine and my fiance's for a little kick. Great recipe, and I will be making again 😊

Hi made this tonight! Delicious! Curious what the amout of zuchinni measures out to after spirilizing/ grating? I shared with my mom and was wondering what you would say a serving size is? About a cup? And if so guessing a medium sized zucchini sound right? Also i used almond milk instead of cows no issues.

Oh Em Gee! I only used one zucchini and one yellow squash because I wasn't certain the people who live here would love it like I was sure I would.

It's GONE! In fact, the husband loved it and the girl child compared it to mac n cheese.

I did a couple things different... I didn't add water bc zucchini is super watery and figured it would just work itself out. It did. Instead I added some Country Crock pretend butter and sauteed it until it was soft as I wanted.

I added about 2 oz of cream cheese, a cup or so of shredded colby jack cheese and some milk. It was perfect!

This was a great idea! I love how they are cut after using the spiralizer. Thanks so much for the recipe! It was definitely a hit with my family!

I will definitely make this again, but will omit the salt, or adjust to taste, as my family found it to be extremely salty.
