Cauliflower Bread Caprese Grilled Cheese

Alright, so I'm a day late posting this but yesterday was national grilled cheese day and since I had no idea what I wanted to make for dinner I figured it would be a good night to try out a version of the cauliflower bread grilled cheese I started to see trending on Pinterest. I'd been curious to see how it would come out texture / taste wise. First thing I'll tell you right now is that it doesn't come out tasting like your normal bread, nor is it as sturdy. BUT on a positive note it tasted pretty darn good. I ended up eating it with a fork (even though you can technically pick it up, it's not super sturdy so it got a little crumbly after taking a couple bites). All in all it was interesting to try making and allowed me to feel like I was getting my grilled cheese without the white carbs. Plus, who cares if you need to use a fork? You still get the cheesy goodness and don't feel guilty afterward! 
YIELDS 2 SANDWICHES
333 CALORIES, 28G PROTEIN EACH
You will need:
  • 1 head cauliflower
  • 1 egg
  • 1/2 cup reduced fat shredded mozzarella
  • 4 slices low fat mozzarella
  • 1-2 tomatoes
  • 4 tsp basil paste (or fresh leaves)
  • Silpat (silicon baking mat) or parchment paper for baking on.

Directions:
  • Preheat oven to convection bake 425 (or 450' non convection).

  • Start by chopping cauliflower into florets and throwing out the stem portion. 
  • Next you want to process the cauliflower until it is ground into "flour" - chunks smaller than grains of rice. 
    • If your food processor is as small as mine you will need to do the cauliflower in batches like pictured above. If you don't have a food processor you could try using a blender.

  • Put all the cauliflower into a MICROWAVE SAFE bowl. Place a couple layers of paper towel under the bowl in the microwave to keep plate from getting to warm. 
  • Cook it in the microwave 5 minute intervals, 3 times. Stir every 5 minutes until you have cooked it for a total of 15. Be careful as the bowl and cauliflower will be hot, use your oven gloves! 
    • This whole process dries the cauliflower out so we can form it into bread. I can't take credit for this process, you can find different ways online to dry the cauliflower out!

  • Add your egg, shredded mozzarella and sprinkle some garlic salt to the cauliflower mix and stir up until even. Divide "dough" into four even parts.

  • Use your hands to shape cauliflower into 4 pieces of "bread" on top of your silicon mat or parchment paper (silicon mat highly recommended!) and bake for 20 minutes. 
  • Let cool for 5 minutes. 
  • Leave the oven on.

  • Add a slice of mozzarella to two pieces and then on the other two (bottom pieces) spread a couple teaspoons of basil paste (or add fresh basil leaves). 
  • Layer another mozzarella slice and tomatoes onto bottom piece. 
  • Carefully use a spatula to flip and place top piece, cheese down to form the sandwiches. Do this gently! Cauliflower bread is delicate as I mentioned before.

  • Bake the sandwiches for another 5-10 minutes to allow cheese to melt the sandwich together.

At first glance, I thought those four bread-like stuff were really loaf breads! That is why I immediately continue reading your blog and look for the cauliflower. Little did I know, the cauliflower that I have been looking for are actually those loaf breads look like stuff! Wow! I really did not expect that! I will recommend this to my brother because he's been asking for help because his son won't it any vegetable. His wife and him are really having a hard time how would they convince their son to eat vegetables. I think this really is perfect for my nephew.
