Stuffed peppers have really grown on me over the last couple of years. I wasn't always a fan, or just really never thought to make them because my family didn't growing up, but lately I'm totally loving them! They're a great way to mix in your veggies and your carbs or your veggies and your protein up into one side dish that's super easy and yummy! This recipe is a great basic staple and starter stuffed pepper recipe with only a few ingredients and minimal prep time. It's one of my favorites for that very reason! I love pairing this with a serving of lean meat such as grilled chicken for a well balanced meal or if you want to get creative I'd also highly recommend mixing up some cooked ground beef or turkey into your cheese rice mix and making a complete meal out of these babies! Hi y'all! After a weekend full of wine-tasting, brunch, bottomless mimosas, and pizza it was time to get a healthy meal on the table and load up on some veggies. Don't get me wrong this weekend was totally worth every calorie, but now it's time to get back into the swing of things as we roll into another week. My friends and I were tossing some teriyaki chicken on the grill tonight with my job being to fry up some rice and prepare the vegetables for a good ol' well balanced meal. Since the grill was fired up anyway I figured why not do a "stir-fry" on the grill and I'm happy to report the balance between stir-fry sauce & veggies and the taste of being cooked on the grill was perfect! I hope y'all enjoy as much as we did!
The weekend is here which means the pizza craving is real, y'all. I figured I better get creative and find a healthier way to kill that craving considering I actually got my butt to the gym before work this week. If I'm going to be up at 4:30 a.m. to work out I better try not to kill that progress with my first weekend meal. Early mornings are no joke. These spaghetti squash pizza boats were the perfect compromise. Cut down the carbs & get in a veggie serving all while enjoying the cheesy, saucy, pepperoni goodness. I also love that the oven does most of the work on this recipe allowing me to kick back with my glass of wine and relax.
Sweet potato was never my thing growing up, I'm not sure what changed but I can't get enough of it now! They say your taste buds change every so often, or maybe I just learned how to cook and prepare it ways I liked it! I absolutely love baking these thicker rounds, despite most recipes usually calling for them to be much thinner. If you let them bake long enough the outside gets crispy and the inside is almost like mashed potato and it is a-maz-ing. Seasoned with a little olive oil, salt & pepper these come out with that perfect sweet & salty flavor combo and are so simple to prepare and pop in the oven. Healthy, easy, and delish? That's my kind of recipe!
Hi everyone! It's been a busy week this week so I haven't posted a recipe since last Monday, but in tradition with what I've been doing over the last few weeks I wanted to make up another fun healthy alternative this Monday! I truly believe in trying to start the week off with good eating habits to make sticking to it through the week a little easier, and allowing more guilt free splurging over the weekend. This cheesy zucchini has been on my mind to try lately and I'm so glad I finely attempted making some, because it was so good!! Mac & Cheese is one of my favorite guilty pleasures when it comes to food, and after a few of my other zoodle recipes came out good (asiago zoodles & white wine garlic zoodles) I couldn't wait to attempt a cheesy version. This recipe is best served as a side dish... can't wait to try this again and throw some protein to make more of a meal out of it! I encourage you to get creative with this. With that being said, let's get to it!
The secret to perfect broccolini? Boil it a few minutes before sautéing! Seriously, makes a world of difference in how tender it is. Broccolini has quickly become one of my favorite go to veggies to cook up at night because it is so quick and easy and, in my opinion, actually tastes great!
