Summertime is just around the corner which means lots of barbecues, picnics, and gatherings that are perfect occasions for a yummy chilled pasta salad! Also a quick side note, once I posted this I realized I have been using pesto in just about every recipe I have posted lately. I really love it so much, but I promise to tone down on using pesto for a bit and get back to some variety! This pasta salad is so yummy, light, and most importantly it is really easy to put together and can be done fairly last minute, because let's be honest... we don't always prepare and put stuff together ahead of time like we probably should.
If you love following all the latest healthy food trends there is two words you need to know. Buddha Bowl. They're really just a fancy protein bowl but it is so much for fun if it's trendy and called a Buddha bowl, right?! I decided to hop on the bandwagon and give one a try... so yummy and I felt so good about calling this my meal. This bowl is packed with protein, greens, and healthy grains and consists of seared ahi tuna (super easy to do, I promise), raw spinach, brown rice, quinoa, avocado, sesame seeds, and an easy to whip up soy ginger wasabi vinaigrette. I am totally loving chilled quinoa lately, it has such a light bland flavor when chilled so it really takes on the flavor of all the ingredients you put in the salad which I love. Another huge bonus? Quinoa is packed with protein and fiber which helps you feel really full and stay that way longer than a traditional lettuce based salad. Healthy, filling, AND delicious? Yes please! If you like a standard Greek salad this is a totally delicious alternative and makes a great meal or side dish!
Y'all, I am so excited about my new meal prep containers from MacroStacks. I went off the breakfast & lunch meal plan at my office in hopes of eating healthier and less throughout the day... plus I'll get to prepare more food for SDE to share with all of you! I think the key to me actually planning out meals for work and bringing them with me is ease to use, put in the fridge without taking up too much space, and easy to clean - these containers are perfect! I reached out to some friends for input on what they'd like to see in my first meal prep post and the majority gave me feedback that it would be great to get some inspiration on a yummy lunch for people on the go who have no access to a microwave or to heat their food while on the go. I loved this idea because for any of you packing for a busy day on the go or for your kids' lunch you can't always meal prep chicken & veggies and such combos. Now that I will be packing my own lunches for work I'll be doing meal prep posts more often and would love for you to comment what you'd like to see in a meal prep post (hot or cold) to inspire me for future weeks!
Another light and healthy Monday here, trying to do my best to get back into the swing of things during the week days! Caesar salad is one of my very favorite classics, and while I love the basic caesar or chicken caesar salads, adding in avocado and subbing shrimp for chicken strips is just so. darn. good! I also always use a yogurt based dressing to cut calories and up protein intake, to be honest I prefer it to regular caesar so win win situation! With swim suit season in full force it's time to up the salad intake and I'm trying to make that as delish as possible for the both of us!
Hi y'all! I'll keep this post short and sweet as it's such a simple salad to toss together. I absolutely love fruit, cheese, and nut combos - especially in the summer time.... so refreshing! I tossed up all these ingredients with a light raspberry vinaigrette and it was so delicious!

I had my first "summer party" yesterday celebrating a friend's baby shower and this salad was the perfect addition to an amazing food spread! I can't wait to share some more fun and creative pasta salads with you throughout the summer, but I figured a nice basic Italian pasta salad would be a good one to start with. I love caprese salads - it's one of my favorite appetizers to order at any Italian restaurant. Even though it incorporates cheese it just tastes so light and refreshing! Making it at home is extremely simple and it's pretty easy to make it look fancy if you're making a nice dinner!
