If you've never had beer can chicken I'm just going to say it right now. You. are. missing. out. Cooking the chicken whole allows all of the juices to stay in and keep the meat really tender. Adding the can of beer inside allows carbonation and steaming to hydrate the chicken from the inside out. You can season it and add other flavoring to the beer can to infuse the chicken and really make the flavoring your own. Point being this is really darn delicious ... and good news is it's easier than it looks to cook and I will walk you through it step by step!
Hi y'all! I was so excited to make these and have them turn out great, I see all sorts of chicken roll up ideas online and have been dying to make some just hadn't gotten around to it. Most of the ricotta recipes I see are almost all ricotta with flakes of spinach or other flavors in them... as much as I love ricotta I really wanted to come up with something that had a little more flavor to add to the creaminess ricotta offers. Best part about that is I could get away with a low fat ricotta without sacrificing any flavor... and obviously the lower calorie the better! With that being said let's get to it so y'all can enjoy these as much as I did!
Y'all, these are so addicting! If you've got a party or event to make up an appetizer for I can't recommend this enough. It takes about 5 minutes of my time to put together and then the crock-pot takes care of the rest. Recipes that are so little effort & ingredients, yet are big hits are the best, am I right?! The flavor is incredible and they are so tender from being in the crock-pot. Enjoy!

The biggest thing for me when it comes to cooking any meat is keeping it as tender as possible. These are so tender and with such a simple flavor they are perfect to slice up and add to pastas or salads, although they are great just by themselves too! I put these over a pistachio pesto pasta which was a great combo!
