Energy bites have become a staple snack I almost always keep on hand. They take only a few minutes to make, are so yummy, and are perfect for a grab and go snack for busy days. As fall rolled around this year and everyone was talking pumpkin spice this pumpkin spice that I decided to give a pumpkin spice twist to the classic peanut butter energy bite recipe I love. The pumpkin puree and pumpkin pie spice added to this version is so yummy. I also added chocolate chips, because there is always room for chocolate chips in an energy bite recipe! Enjoy!

If y'all haven't tried roasted pumpkin seeds before you're in for a treat. They are so easy to make and are not only delicious but packed with antioxidants and vitamins! I've come to love pumpkin carving time each year knowing it means I get all my own fresh pumpkin seeds to roast up. So next time around don't just scoop out all the "guts" of your pumpkin into the trash, seriously, save them! All you need is a little butter and seasonings you probably already have in the pantry and you have a free healthy seasonal snack! I made up these sweet roasted cinnamon sugar seeds this year and I can't stop snacking on them. I hope y'all enjoy!

Cheesy Guacamole Witches Brew Dip

How cute is this witches brew dip, y'all?! If you have followed any of my previous posts you can probably tell I love festive holiday cooking, I have so much fun with it! I love looking at everyones cute ideas on Pinterest and feel like one of the big trends the last couple years has been the pumpkin throwing up guacamole...I wanted to find a way to switch it up and put a fun twist on it! As much as I love that idea we've got to get a little original sometimes! With queso being my favorite dip, and green being a great Halloween color, I figured a creamy queso guacamole would be the perfect solution. It was SO good y'all! I mean what's not to love about a healthy dose of cheese & avocado, right? Not only did it taste great but I loved the way it came out specifically for Halloween. You can call it witches brew, monster slim, etc... whatever fits your dishes or theme! Best part is it only takes a few minutes to make and larger batches would be super easy to create. If you're having a Halloween party you'll be able to get a fun festive appetizer out on the table quickly so you can spend more time on other recipes, with your guests, or sipping on a cocktail. Pumpkin Spice White Russians

Have y'all ever tried seasonal White Russian drinks?! I am so hooked. I wasn't a big coffee fan until recently, and I've never been a big milk fan so White Russians weren't always my cup of tea but last holiday season my boyfriend got me try a peppermint flavored one he likes to make and I was obsessed. It was easily my new favorite holiday cocktail that just tasted like coziness and Christmas. As the holiday season is approaching us I've been craving one but just can't justify getting all Christmasy just yet. When I went to the grocery store over the weekend I saw the pumpkin spice Kahlua and got more excited than I probably should have because voila, I could have my seasonal White Russian with a "fall" twist! For any movie buffs out there I also finally saw The Big Lebowski this year and can't help but love this drink a little more as it's "The Dude's" signature. This rendition was so yummy and a perfect drink to serve up to guests this season or just to cozy up by the fire with a movie on.

Butternut Squash Risotto

I am so excited about this recipe for a couple reasons. I joined a food bloggers recipe swap club where every month I will be making a recipe of my choice from a fellow food bloggers page and sharing it with all of you. I love this idea and am already so excited about this club not only because I get to network with other foodies but it challenges me to make something I may not have thought of! This month I was assigned The Olive Blogger and because it's fall and I was feeling festive and cozy this weekend I chose to try their Butternut Squash Risotto recipe. I'm so glad this was my pick because it was seriously amazing - like I can't wait to make it for guests, new fall staple recipe amazing.

Cheesy Chili & Rice Stuffed Jack O' Peppers

The first time I made these Pinterest inspired stuffed "pumpkin" carved bell peppers was a few years ago, every year since then they have been a fun seasonal staple but this years were my absolute favorite! I mean just look at how the cheesy rice & chili mix just pours out sort of like our lil jack o' pepper is throwing up which is just so festive. I know, thoughts of barfing and food don't exactly go hand in hand, but Halloween is our exception. Think about all of your Pinterest pumpkins throwing up guacamole all over the table, it's acceptable for this holiday. It just is. The combo of the chili, cheese, and rice was not only perfect for these gruesome lil peppers but it tasted so fantastic! Using a low fat cheese and turkey chili we're able to cut down on some fat and get a balance meal of veges, carbs, and lotsa protein! I hope you have fun and enjoy!

Pumpkin banana bread is one of my favorite things to make during the fall season. It's easy to bake, seasonal, delicious, and everyone seems to enjoy it! I wanted to bring some into my office to share, but the bread is kind of difficult as far as cutting it up and passing out slices so I figured why not try and make my recipe into muffins?! I was really happy with how they turned out and they were a huge hit today! ​Make sure you have cupcake liners for best results.

Jack O' Lantern Cheeseburgers

Carve a Jack O' Lantern face in some cheddar or American cheese to make your burgers fun and festive in October. I use a toothpick to carve the cheese since it's so fine but you can use whatever you feel comfortable with! Also make sure you don't put the cheese on until the burgers are almost done or melt it on after so you keep the Jack O' Lantern's face shape. Have fun and enjoy!
