Is anyone else as excited as I am that summer is finally here?! I mean maybe not officially but Memorial Day Weekend approaching just screams summer is finally here. As fun as summer is it also means lot's of entertaining - Memorial Day, 4th of July, baby showers, you name it. If you're anything like me it also means white wine season... I mean it's only appropriate to step up the refreshing wine game for beautiful outdoor days, right?! With that in mind I love having easy to whip up appetizers or shareable plates that impress guests, and well, pair well with my wine. I made this Puff Pastry flatbread for a get together recently and it was a total hit. I topped it with brie, honey, apple, and onion for a really yummy mix of flavors, and the Puff Pastry makes it so light and airy. I hope y'all enjoy as much as I do.

I just received my new silicone cupcake / muffin molds in the mail and could not wait to give them a try. Silicone baking sheets or pretty much silicone anything has become my best friend in the kitchen. I mean it's super easy to clean and use, and absolutely non stick which means no adding extra grease and oil when baking, and it's reusable! I highly recommend. Anyway, these slightly lemon-y blueberry muffins were my guinea pig recipe to test these molds out and not only did I love the molds and how easy the baking process was, but we absolutely LOVED the way these muffins turned out. I'm a huge fan of lemon in desserts, but I know it's not for everyone. so I did a just slightly added lemon version of a classic blueberry muffin for a little twist of flavor everyone can enjoy. Next time around I'll be ramping the lemon up :), so lemon lovers, stay tuned! I used blueberry yogurt to make these nice and moist, which I love because it made these muffins almost cake like which made them not only a perfect breakfast, but a yummy dessert as well. I love a good "fluffy" muffin as much as the next person, but sometimes I just have to switch it up! Think Nothing Bundt Cake, in muffin form & sans the glaze. Seriously so yummy! I hope you enjoy!
These savory breakfast muffins are the product of another delicious and successful recipe swap club month. This month I worked from EAT what we EAT which is a great blog highlighting recipes that are easy, and family friendly. I chose to make their breakfast muffin recipe for two reasons. One, because the latest breakfast post I did has been a total hit, I mean y'all seem to really love breakfast! Two, because they looked downright delicious, I mean c'mon who doesn't love a good cheesy breakfast?! I made these up on Superbowl Sunday for a pre-game brunch and they were a total hit. Another great bonus? They are super easy, like anyone can do this easy. You brown up some sausage, mix in some pancake mix and eggs, and then load them up with cheese and let the oven do the cookin'. Are you sold yet? Let's get to it!
Yes, that's right, I said overnight breakfast. You know what that means? You get to wake up, pop this in the oven & serve a great breakfast with zero morning time prep work. It is so easy to put this together the day or night before you want to bake it and get all your prep work and dishes out of the way so you can just enjoy your morning. I particularly love this recipe for holiday mornings. You've got enough to worry about on holidays like focusing on your main meal of the day and spending time with family so anything you can do the day before is always helpful! I also love overnight breakfasts because let's be honest, if you're having any sort of party out or at your house, a stress free comfort food breakfast will be real nice to wake up to, especially if you had one too many cocktails the night before. Whatever your occassion this is sure to be a family favorite.... I mean what's not too love about cheesy egg & potato all combined together?!
Happy 4th of July y'all! I'm going to keep this post short and sweet as it's super simple and I'm ready to get back to good family holiday time! This watermelon dish is so easy to prepare and perfect to serve up at any of our patriotic holidays like 4th of July, Labor Day, and Memorial Day! Those are usually all great BBQ holidays, and what's a good summer BBQ without some fresh watermelon?! Knowing how easy this as to put together I can't wait to test out some other toppings and spreads on watermelon for healthy snacking... feel free to get creative here!
Happy National Pigs in a Blanket day y'all! If you follow any of my other recipes you may know by now that I love pigs in a blanket - I've shared the Pretzel version as well as cheesy jalapeno, and today made up this bacon wrapped version, all three so delicious! I may be partial to these though... I mean add bacon to anything and I'm sold. I love how easy these are to make and they're always a brunch or party hit.
