I know I say this a lot, but I am seriously so excited about this post in particular. 2016 has been a great year as Simply Delish Eats came to life in April and I feel like I've come so far with this whole food blogging thing in eight short months. I think Santa realized what a passion blogging has become for me and decided to bring me a professional camera for Christmas. Finally I have a nice camera, I can't even tell y'all how excited I am!!! I am beyond grateful to all of you for being here and cannot wait to kick off 2017 with better images and upgraded content.... starting with this totally delicious cajun baked shrimp. I had a hard time deciding what my first post would be testing out the camera, I don't know why I landed on cajun shrimp but it just sounded so good and so here we are. I hope y'all love it as much as I did! Happy almost New Year!

INGREDIENTS:
  • 1 lb raw peeled shrimp
  • 5 tbsp butter
  • 1.5 tbsp cajun seasoning
  • 1 tbsp garlic paste, or 2 cloves minced
  • Juice from 1 lemon
  • Pinch of salt & pepper
DIRECTIONS:
  1. Preheat oven to 350'.
  2. Peel shrimp if needed, as you can see pictured above mine still had the shells with legs in tact. You can also pinch the tail off at this point if desired, I did, but this is not required.
  3. Add butter, cajun seasoning, garlic, lemon juice, salt & pepper to a microwave safe bowl. Heat slowly, 30 seconds at a time, stirring everything together until butter is fully melted.
  4. Put shrimp on an oven safe tray and then pour cajun butter mix over over the shrimp.
  5. Stir shrimp in the cajun butter mix until evenly coated.
  6. Bake 10-12 minutes. Your shrimp should turn orange and look as pictured when done.
  7. Serve over rice, pasta, or however desired and most importantly, ENJOY!
