Fact: If it wouldn't totally kill my health and diet I think I would live off of cheese and charcuterie boards. I'm an absolute cheese fiend...and it doesn't hurt that it pairs so darn perfectly with the glass of wine you can usually find in my hand. Much to my budget's dismay I've started collecting and aging wine and spending just about every weekend deciding which coveted bottle to open and what little snack assortment I can put together to go with it. The chocolates, the cheeses, the tapenades, the salamis - you name it and I probably have more on hand than I should. A vino lifestlye is one I'm okay with and my budget is just going to have to forgive me, ha!
Brie is without a doubt one of my favorite cheeses to snack one with wine and crackers - it's sort of the staple to my assortment and then I'll switch up everything around it. I'm so excited about this recipe because it is SO easy to execute - seriously 2 minute prep, a little oven action and voila! I am a fan of anything that requires pretty much no effort on my part and actually elevates a party or meal - I mean just look at the oozing cheese!
I paired this baked brie with a pepper jelly which was incredible, but you could absolutely pick a different jam if you wanted. I love brie with blackberry jam so I think that will be the next baked brie post here at SDE! Also can we take a second to talk about those crackers? They are Parmesan crisps done up like an everything bagel, I mean come on! Sadly I can't take credit for those, I can thank whole foods for another addicting, probably cost more than it should, but feels totally worth it, snack.
Lastly, before we get to it - please feel free to omit adding in the bell pepper - I had some on hand and decided to add it to get in some extra veggies since I was doing pepper jelly. It was great and I would recommend if you have some bell pepper because it adds a little extra texture, but the brie will be fantastic with just pepper jelly so don't fret if you don't have any on hand!
