20 minute Turkey Bolognese Zoodles

Oh. My. Yum. I'm a big fan of zoodles, mainly because I'm a big fan of pasta but not a big fan of the calories I'd be consuming if I ate pasta every time I craved it. Which would be a lot. I especially loved this zoodle recipe, It was so inexpensive, filling, healthy, and did I mention on the table within 20 minutes? Most other zoodle recipes I've made have been delicious but either end up not being satisfying enough leaving me hungry an hour later, or too calorie packed because they're loaded with creamy sauce or fattier meat. The lean turkey is so perfect in this recipe because it's such healthy filling protein and once mixed in with marinara you can't even tell it's turkey over beef. It also completely overpowers the texture of the zucchini and just feels like soft pasta with meat sauce. I also loved how quickly I could make this recipe from start to end. I've had a lot of later evenings at the office lately and I know all of you with busy schedules understand my appreciation for a really quick but homemade meal. Anyway, I'll stop ranting about why I loved this recipe so much and let you get to it! 
Ingredients:
  • 1 lb lean ground turkey
  • 1.5 cups marinara sauce
  • 3-4 zucchinis
  • Optional: Parmesan, salt & pepper to taste

*This makes enough for a full meal for 2 people, 3 if you want small portions - this recipe is easy to adjust the quantity on if you want more or less!

Directions:
  1. ​Start a large pot of water to boil. 
  2. While the water is heating to boiling level spiralize your zucchinis. To do so slice off the ends so they are flat. I use a hand spiralizer on zucchini because it's so quick and easy but you can use any form of spiralizer you have per the instructions. 
  3. Add to boiling water, sprinkle a pinch of salt over the zoodles and boil no more than 5 minutes until zoodles soften but are not getting mushy. 
  4. While the zoodles boil add your turkey meat to a skillet and cook over medium heat continuing to break up and stir. 
  5. Pull zoodles off the stove while meat is cooking and pour it into a strainer, tossing a couple times to get a lot of the liquid out. 
  6. Once meat is cooked (no more pink), pour in your sauce and stir all together. Any marinara or red sauce you've chosen is fine! 
  7. Add your zoodles to a serving bowl or divvy up into however many dishes you are serving and top with your bolgonese sauce. 
  8. Add a little parmesan, salt, and/or pepper if you would like and enjoy!!!
