White Wine Pasta

This white wine pasta sauce is simple and is great served with the wine you make it with. You may choose any white of your choice! Use a fun noodle to make the dish pretty - I used grape shaped to match the wine theme. 

You will need:
  • 1 box of pasta
  • 1 cup white wine
  • 1 1/2 cups heavy whipping cream
  • 1 1/2 cups parmesan cheese
  • 4 tbsp butter
  • Italian seasoning (optional)
  • Basil (optional)
  • 2 tbsp flour
  • Sea salt
  • Pepper
Directions:
  1. Start by boiling your pasta - make the sauce while it cooks. When noodles are done drain and put back in pan. 
  2. In a separate sauce pan melt your butter. 
  3. Add in the heavy whipping cream and bring to a boil whisking. 
  4. Add in the wine, seasonings, and parmesan cheese and stir until fully combine and cheese is melted. 
  5. Pour the sauce over the noodles and add the flour to the mix and stir together. 
  6. Serve and enjoy!

Mozzarella Tomato Cream Sauce w/ Broccoli

This pasta was simple and delicious. Mozzarella doesn't have a strong flavor like other cheeses so it is a softer taste which pairs well with the vegetables.

You will need:
  • 1/2 box of penne pasta (8 oz). -serves 4
  • 1/2 cup chopped mozzarella fresca
  • 1/2 cup diced tomatos (canned or fresh)
  • 4 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1/4 heavy cream (optional)
  • 1 cup (or however much you want) broccoli florets 
  • Sea salt to taste

Step 1:
Boil water for your pasta adding in when ready. Add a dash of sea salt to the water. Drain and put back in pan when done.

Step 2:
In a small skillet heat a tbsp of olive oil and broccoli over medium heat until cooked. Remove when done and set aside. 
While the pasta and broccoli are cooking start your sauce....

Chop 1/2 cup mozzarella fresca up. The slices are for the caprese bites garnish - not necessary.

Add 1/2 cup diced tomatoes to 1/2 cup cheese. (It looks like more than 1 cup total, but it's not).

In a medium saucepan melt butter. Add flour and whisk together. If you want a creamier sauce add your cream now too and whisk.

Add in cheese and tomatoes stirring continuously to allow cheese to melt. Add milk and whisk until sauce is fully combined and heated.

Add your broccoli to your pasta saucepan and then pour in sauce and stir it all up. 

As I said in the beginning, mozzarella has a blander taste than most cheeses - so add in sea salt (or himalayan pink salt) to taste until you get desired flavor.

Baked Chicken Caprese Pesto Sandwich

Caprese salad, bread, and pesto are a few of my favorite foods - combining them into one sandwich tasted great! My roommate was skeptical to try this because she doesn't like sandwiches made at home compared to how well a restaurant will make it-and she loved it!

                                                                                                                     You will need:
  • Sandwich bread - preferably one that is meant to be baked for a few minutes. I used an artisan baking rolls found in the bakery area of my local grocery. 
  • Chicken breast - I used a Tyson breaded breast - but you could use any chicken you wanted. 
  • 1 slice tomato - I prefer vine ripe on sandwiches. 
  • Fresh mozzerella fresca
  • Pesto - I got lazy this time and used jarred pesto, but homemade is much better. The link for my homemade recipe is at the bottom of this blog entry!

PREHEAT OVEN TO 400' (OR FOLLOW DIRECTIONS ON YOU BREAD IF IT IS MEANT TO BE BAKED).

Step 1:
Cut bread in half and spread a light layer of pesto on the inside of both the top and bottom. Place bottom in a baking tray.

Step 2:
Add your chicken breast, slice of tomato, and slice of mozzarella to bottom of sandwich.

Add top and prepare to bake. 
Optional: brush a little butter and dash Italian seasoning on top for presentation.

I served with avocado deviled eggs & sweet potato fries, which all tasted great together! Recipes below.

Angel Hair through SausageĀ

I kept seeing people "pin" and post recipes that stuck spaghetti noodles through hot dogs because it looks cool - but when I thought about making it, it didn't sound quite as appealing as it looked. I don't like hot dogs, and what kind of sauce goes with spaghetti AND hot dogs?! I decided to change it up and used angel hair, good sausage, and a really light pesto sauce that doesn't over power the meat - and actually tastes good with it.

To make 2 portions (pictured) you will need:
  • Sausage meat sliced (depending how much meat you want-you can always add more or less noodles to each slice). 
  • Angel hair pasta - you could use spaghetti if you had that. 
  • 1/4 cup pesto
  • 4 tbsp heavy whipping cream
  • 2 tbsp milk
  • 1 tbsp sea salt
  • 1 tbsp butter
  • 1 tbsp flour

Directions:

  1. Bring water to a boil in a large sauce pan. I added beef bouillon to keep the sausage flavor in, but that is optional.
  2.  Slice up sausage and gently stick dry noodles through center.
  3. Place each bunch into the water as picture - let it fall by itself so you don't break the noodles. 
  4. While the noodles are boiling add the rest of the ingredients to a small sauce pan to make the pesto sauce. Bring to a boil and whisk over medium heat until slightly thickened and all ingredients are melted together. 
  5. Drain noodles and pour sauce over them.

Garlic Cream & Sausage Pasta

Everyone in my house loved this pasta. I found a creamy sauce recipe, changed it up and added sausage bites and it turned out delicious.

You will need:
  • Bow tie pasta (I used just over half a box) - and feel free to use another kind of pasta if you prefer. 
  • Sausage - about 1 cup chopped
  • 1 1/3 cups heavy whipping cream
  • 1/4 cup butter
  • 4 cloves garlic -minced
  • Sea salt
  •  1/4 cup mozzarella cheese
  • 1.4 cup parmigiano reggiano cheese 
  • 1 tbsp flour
  • 1 tsp basil
  • 1 tsp parsley

Directions:

  1. Bring water to a boil - add in pasta. 
  2. Heat chopped sausage in a skillet for a few minutes and set aside. 
  3. In a large skillet combine whipping cream, butter, mozzarelle cheese, garlic, and salt - heat over medium heat and whisk together.
  4. When sauce mix is melted and blended add in flour, basil, parsley, and Parmesan cheese. Whisk together until fully blended. 
  5. Drain pasta & add to sauce tossing together. 
  6. Add in sausage and toss again. 
  7. Serve & Enjoy!
