Country Potato & Egg Squres

I love egg & potato mixed, and while this could easily be done in a scramble it's sometimes fun to serve people dishes that look pretty. These bake in the oven so you don't have to stand over the stove as your eggs cook!

You will need:
  • 1 egg per "square" (I used a brownie pan). 
  • Already cooked hashbrown or potato chopped up. About a spoonful per square.
  • Grated cheese of your choice to sprinkle on top. 
  • Optional sour cream for dipping or topping. 

Directions:

  1. Preheat oven to 400'. 
  2. Spray brownie pan (you could use a smaller cupcake pan for a different shape) with cooking spray. 
  3. Whisk how many eggs you choose and then pour an even amount into each square in your pan. Don't fill all the way to top, just over 2/3. 
  4. Drop in about a spoonful of cooked potato & sprinkle cheese on top. 
  5. Bake about 15-20 minutes - you will notice edges start to look crisp when they are ready.

    6.    Add optional sour cream to plate or a dollop on top of each square, serve, and enjoy!

Breakfast Pizza - Egg white crust w/ turkey sausage & avocado.

Using an egg white & whole grain oatmeal crust and turkey sausage, avocado and light cheese this is a protein packed fun way to eat breakfast!

You will need:
  1. 1/3 cup egg whites
  2. 1/2 cup whole grain oats (oatmeal)
  3. 1/4 cup water
  4. 1/2 tbsp flour
  5. Dash of salt
  6. Pizza sauce
  7. 2% cheese blend of choice
  8. Turkey sausage (I used a frozen Jimmy Dean blend ready to microwave or skillet heat). 
  9. 1/4 avocado chopped. 
Crust Directions:
  1. Combine water, oats, egg whites, flour, and salt in a bowl and hand blend. **IF you don't have a hand blender you may put in a regular blender, just make sure you spatula out all mix. 
  2. Pour into a medium skillet, approx 8". 
  3. Cook over high heat 3-4 minutes. 
  4. Flip dough over and heat other side. HINT: I slide it out onto a cutting board, place frying pan upside down over board and flip it that way so it does not break. 
  5. Cook another 2-3 minutes and slide onto a baking sheet.

Pizza Directions:
  1.  Preheat oven to 400'. 
  2. Heat up desired amount of sausage. 
  3. Add thin layer of pizza sauce to crust. 
  4. Add your sausage. 
  5. Add layer of desired amount of avocado.
  6. Sprinkle cheese on top to help hold everything together when baked. 
  7. Bake about 7-8 minutes.

Breakfast Bruschetta

If you like eggs and bruschetta you will love this combo - it's a great easy way to spice up eggs & toast!

You will need:
  • French bread (but you could use any kind of bread you wanted). 
  • Eggs
  • Butter
  • Italian Cheese
  • Italian Seasoning
  • Chopped Onion
  • Chopped Tomato
Prep Directions:
  1. Preheat oven to 400'.
  2. Slice and chop a layer of onion and set aside.
  3. Slice and chop a layer of tomato and set aside.
  4. Whisk 2 eggs with a couple dashes of italian seasoning. (If you don't have any leave it out). 
  5. Fry eggs until ALMOST cooked, they will cook a little more in the oven - set aside.

Directions:
  1. Slice bread in half & brush with soft or melted butter. 
  2. Sprinkle chopped onions on top. 
  3. Add a layer of Italian blend cheese. 
  4. Add eggs on top of cheese. 
  5. Sprinkle chopped tomatoes on top. 
  6. Lightly salt and pepper to taste if desired.
  7. Bake in the oven for 6 minutes.

Bacon & Avocado Breakfast Tacos

Breakfast tacos are a southern favorite, and while I love going to a local taco shop to get them they are so easy to make at home and usually taste just the same. 

Cook up 2 scrambled eggs, add 1/3 cup mexican blend shredded cheese, 3 slices of bacon, 1/2 avocado lightly sprinkled in salt, and taco sauce for dipping or inside the taco if you like. Put the taco as pictured in the microwave 10-15 seconds to warm the shell and help soften everything together, roll up, & enjoy!

Egg, Bacon & Guacamole Sandwich

Okay, so I decided to splurge on breakfast this morning. This was well worth it though!

You will need: Baking sandwich bread, 1 egg, guacamole, 2 slices bacon, & cheese if desired. 

Directions:
  1. Preheat oven to 375'. (Or if your bread asks for a particular temperature you may use that). 
  2. Fry up an egg until yolk is cooked to your preference. 
  3. Layer a few tablespoons guacamole, the bacon, egg, and cheese. 
  4. Add a little butter to inside of top slice to soften the inside during baking.

Egg White, Turkey Sausage, & Basil Bites

These bites are extremely low calorie and high in protein - they are a great way to start your day in any healthy routine. Served with Salsa mixed with a very little bit of light sour cream, they tasted great!

PREHEAT OVEN TO 400'.

Step 1: Spray a mini cupcake tray with cooking spray or olive oil- as many spaces as bites you want to make. Get out egg whites (or just eggs and separate the yolks) & turkey sausage & basil.

Fill each cupcake spot almost to the top with egg white, add in some sausage and top with basil. Put in the oven for about 15 minutes. (If you wish to make sauce mix salsa & light sour cream).
Remove from oven and use a spoon to get each bite out of the tray. Enjoy!

Egg White & Lean Ham Sandwich

These egg white sandwiches make a great filling breakfast and are so simple. I make them for lunch sometimes as well! 

Fry up  a little bit of egg whites (or just a scrambled egg) - and then make like you would with a grilled cheese adding one slice of lean ham and eggs to the bread on a skillet. I add a tiny bit of low fat cheese, salt & pepper for flavor. I use a sandwich maker to make the

Baked Egg Filled Avocado

This is a delicious way to make your usual eggs & toast healthier and more filling. The added cayenne pepper for flavor is also a great metabolism booster; however, it is optional so if you don't like spice feel free to substitute your topping with salt & pepper, or even grated cheese. 

  1. Preheat your oven to 350'.
  2. Slice & core your avocado, digging out a little extra to make room for the egg. Crack an egg into the center & sprinkle a pinch of cayenne pepper over the top. 
  3. Bake about 15 minutes or until the egg filling looks cooked. 


  • Tip: I found it easy to put the avocados into individual baking cups so they wouldn't fall over, but if you don't have these you could try setting them on top of a cupcake tray or just in a normal baking pan.

Egg White Breakfast Bites

These egg white bites are a fun and really easy breakfast, especially if you are trying to eat healthy. 
You'll need:

  • Mini cupcake tray
  • Thin sliced ham - extra lean is best if you're watching your diet. 
  • Egg whites
  • Optional grated cheese


Preheat your oven to 350'.

Cut each ham slice into fourths - use two pieces crossed over each other in each cupcake mold and pushed down in the center to create a ham cup to hold the egg whites. Do this for however many bites you want to make.

Pour egg whites into each ham cup. 

Top with a little grated cheese of your choice and any seasoning you may desire. I like shredded mozzarella with these. 

Bake about 8-10 minutes until edges of ham slightly crisp and no liquid appears in the egg white mix.

Add salt and pepper to taste if you want. Serve and enjoy!
