I love egg & potato mixed, and while this could easily be done in a scramble it's sometimes fun to serve people dishes that look pretty. These bake in the oven so you don't have to stand over the stove as your eggs cook!

Breakfast tacos are a southern favorite, and while I love going to a local taco shop to get them they are so easy to make at home and usually taste just the same.
Cook up 2 scrambled eggs, add 1/3 cup mexican blend shredded cheese, 3 slices of bacon, 1/2 avocado lightly sprinkled in salt, and taco sauce for dipping or inside the taco if you like. Put the taco as pictured in the microwave 10-15 seconds to warm the shell and help soften everything together, roll up, & enjoy! Okay, so I decided to splurge on breakfast this morning. This was well worth it though!

Preheat your oven to 350'. Cut each ham slice into fourths - use two pieces crossed over each other in each cupcake mold and pushed down in the center to create a ham cup to hold the egg whites. Do this for however many bites you want to make. Pour egg whites into each ham cup. Top with a little grated cheese of your choice and any seasoning you may desire. I like shredded mozzarella with these. Bake about 8-10 minutes until edges of ham slightly crisp and no liquid appears in the egg white mix. Add salt and pepper to taste if you want. Serve and enjoy!
