Baked Lamb & Feta Nachos

I had some leftover lamb meat from a roast and thought I'd try using it up by making lamb instead of beef nachos. My family could not get enough of these, my dad even saying they were the best nachos he'd ever had - (he loves lamb though). 

You will need:
  • Tortilla Chips (Imake a quick easy homemade batch, recipe link is below). 
  • Cooked lamb cut into small bites.
  • Chopped avocado, tomato, onion, and feta cheese. 

*If you don't like any of those ingredients, don't put them on and make the nachos your own!

Directions:
  1. Preheat oven to 325' convection bake - or 350' regular bake. 
  2. Lay tortilla chips on a baking tray, preferably lined with parchment paper - not necessary. 
  3. Evenly disperse all chopped ingredients over chips. 
  4. Bake 8-10 minutes.

Bacon Wrapped Duck Skewers

I have a friend who likes to cook duck - so I asked them to make dinner with me and this is what we came up with. My mom has never liked duck, but after trying it this way she couldn't get enough. It is absolutely delicious!


You will need:
  • Duck meat separated into small handfull sized pieces - as pictured. 
  • Bacon
  • Onion cut into squares - as pictured. \
  • Oven safe Skewers

Directions:
  1. Preheat oven to 325'. 
  2. Place a couple onion squares on each piece of duck meat. 
  3. Wrap each piece with a long slice of bacon (you could use two if they're small). 
  4. Place each bacon wrapped duck piece on the skewer being careful to secure the onion and bacon on. 
  5. Place tin foil on an oven safe baking tray and lay skewers on it. I used a thinner casserole dish so the edges of the skewer layed on edges of pan elevating the duck to cook more even, but a simple tray would be fine. 
  6. Bake about 30 minutes.

Lobster Macaroni & Cheese

I recently tried lobster macacroni and cheese at a restaurant and decided I had to try and make some at home - it is a delicious combo! 

You will need:
  • 8 oz. of macaroni noodles (I used shells).
  • 1 cup cooked lobster meat shredded. (You could use more or less depending on how much you like lobster). 
  • 4 tbsp butter
  • 4 tbsp flour
  • 2 cups milk of your choice
  • 2 cups shredded cheddar
  • 1 tbsp olive oil
  • Sea salt & pepper to taste. 
  • OPTIONAL BAKE TOPPINGS: breadcrumbs, additional cheddar & parmesan cheese.

Directions:

  1. Preheat oven to 350'. 
  2. Boil pasta, drain, and set aside when done. Work on sauce directions below while it boils. 
  3. Melt butter in a medium-large sauce pan. Add in flour and whisk until consistent. Add in milk and continue to whisk bringing the mix to a boil. Once boiling turn heat down to medium and allow to thicken a couple minutes. 
  4. Add the cheese to the white mixture and stir with a spoon or spatula until thoroughly combined. 
  5. Let the cheese simmer over low while you work on the crab. 
  6. Add shredded crab and olive oil to a small saute pan and cook a couple minutes over medium heat just to allow olive oil to coat and warm lobster - you don't want to over cook it. 
  7. Add in the noodles & crab to the cheese mixture and stir until combined. 
  8. Pour the macaroni into a baking dish like pictured above, or just a 9X9 baking pan. 
  9. If you want to sprinkle a little cheese on top or add bread crumbs do so now. (IF you add breadcrumbs spray cooking spray over the top of breadcrumbs, they brown better when moist). 
  10. Lightly salt and pepper the top and bake 20-25 minutes until breadcrumbs start to brown. 


Serve & enjoy!
