These bites put a fun and easy twist on mozzarella sticks and make a great appetizer or party plate. You could serve with any sauce you prefer, I have them over a pesto cream sauce I made - which tasted great!
You will need:
Mozzarella bites - I like ones that come marinated in olive oil & spices for added flavor. If you can't find these you could use mozzarella cheese sticks and cut into bites.
Optional Parmesan cheese.
Preheat the oven to 375'.
Fill a small bowl with bread crumbs and a dash of Parmesan cheese (optional).
Stick a toothpick in each mozzarella bite and dredge through the breadcrumbs until full covered.
Place in oven for about 8-10 minutes.
KEEP AN EYE on these - if they melt too much they will lose shape and become a mess, take out when they are still in circles. The breadcrumbs aren't strong enough to hold in melting cheese.
If you want to serve over pesto sauce I mixed 2 tbsp pesto, 1 tbsp light sour cream, 1 tsp olive oil, 1 tsp milk, and a pinch of flour together - mix up and pour on plate or into a dipping cup to serve.
