Tonight I decided to try making parsley pesto with chives instead of my usual go to basil pesto. It turned out great. For our dinner I paired it with angel hair pasta and some ingredients to make it a little creamier and I loved it! I love my basil pesto but this won't be the last time I make the parsley version!
You will need:
Food processor / blender
2 cups parsley leaves
1/4 cup chopped chives
2 cloves garlic
1/2 cup grated Parmesan
1/2 cup pine nuts
1 tsp sea salt
1/2 cup olive oil
1 tbsp butter
1/3 cup heavy whipping cream
4 servings angel hair pasta ( about 1/3-1/2 1lb box).
Measure out your parsley, chives, pine nuts, parmesan, salt, and 2 garlic cloves and add into a food processor.
Start boiling your pasta on the stove before you get started blending.
Blend together until finely chopped as shown in the above middle image.
Add in your olive oil and once again process until all ingredients are combined as in the above right image.
Drain your pasta, turn the burner off and then put the drained pasta back into sauce pan on the stove.
Pour in your parsley pesto mix and stir.
Turn heat back up to medium and add in your whipping cream and butter. Stir together until full blended and turn the heat back off.
